Melt the butter over low heat until it is slightly hazelnut.
Sift the icing sugar and flour into a bowl. Add the ground almonds and mix.
In a bowl, whip the egg whites to make them smooth. Stir in the mixture of sugar, almonds and flour, then the grated rind and the warm butter, still beating.
